Transylvania at its slowest: the Saxon back roads between Sibiu, Sighișoara and the Bistrița hills, with cool-climate whites tasted at four hundred metres and dinner in restored farmhouses.
Drives are scenic but slower than they look on a map — allow extra time. The trail is best between late May and mid-October, with a small late-November window for the open-cellar nights.
